Ingredients
  

Main Ingredients

  • 2 pieces ripe bananas, mashed Very ripe for optimal sweetness.
  • 1 cup rolled oats
  • 1/4 cup maple syrup (optional) Can be substituted with honey or omitted.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda For better texture.
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk (or any non-dairy milk)
  • 1/2 cup chocolate chips or blueberries (optional) Choose one or both.

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, combine mashed bananas, oats, maple syrup, baking powder, baking soda, salt, and cinnamon.
  • Stir in milk until well combined.
  • If desired, fold in chocolate chips or blueberries.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool before removing them from the tin.

Notes

For fluffier muffins, fill the cups nearly to the brim. If chocolate chips sink, chill the batter. You can also add nuts for added crunch.
