Ingredients
  

Main Ingredients

  • 4 pieces orange roughy fillets, patted dry (6–8 oz each) Thicker ones trimmed if necessary
  • 2 tbsp olive oil or melted butter Either works well
  • 1 tsp kosher salt Use less if you're cautious
  • 1/2 tsp freshly ground black pepper
  • 1 clove garlic, minced Or 1/2 tsp garlic powder if you forgot garlic
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley Substitute with cilantro if desired
  • 1/4 tsp smoked paprika Optional but adds a nice flavor
  • lemon wedges, to serve

Cooking Preparation

  • Preheat the oven to 425°F (220°C) and line a baking sheet with foil or parchment. Pat the fillets dry.
  • Brush the fillets with olive oil or butter; season with salt, pepper, garlic, and paprika.
  • Arrange the fillets skin-side down (if skin is present); sprinkle with lemon zest and bake for 8–12 minutes depending on thickness. Start checking at 8 minutes to avoid overcooking.
  • Remove the fillets from the oven, drizzle with lemon juice and sprinkle with parsley. Let rest for 2 minutes before serving.

Notes

Do not walk away from the oven while cooking as thin fillets can cook very quickly. If they jiggle like shampoo, they're done; if they flake and look sad, you overcooked. Room-temperature fillets take less time than cold ones.
