  • 200 grams Thin rice noodles (bihon) Soak in warm water until soft.
  • 300 grams Chicken or shrimp Choose according to preference.
  • 2 cups Mixed vegetables (carrots, bell peppers, cabbage) Use any vegetables you have on hand.

Seasoning

  • 3 tablespoons Soy sauce Adds umami flavor.
  • 1 tablespoon Fish sauce Optional, can be substituted with more soy sauce.

Aromatics

  • 3 cloves Garlic Minced.
  • 1 piece Onion Sliced.

Cooking Oil

  • 2 tablespoons Oil for stir-frying Crucial for getting a good sizzle.

Instructions
 

Prepare Noodles

  • Soak the bihon noodles in warm water until soft, then drain.

Cooking

  • In a wok or large skillet, heat the oil over medium heat.
  • Sauté garlic and onion until fragrant.
  • Add the meat (chicken or shrimp) and cook until browned.
  • Add the mixed veggies and stir-fry until tender.
  • Stir in the soaked noodles, soy sauce, and fish sauce.
  • Toss everything together until well-combined and heated through.
  • Serve hot and enjoy!

Notes

This dish is great for meal prepping and can be customized with leftover veggies. Store leftovers in an airtight container and reheat gently.
