  • 1 lb Chicken (breast or thighs) Use your preferred cut.
  • 1 can Coconut milk This adds creaminess to the dish.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 1 tbsp Ginger Fresh, minced.
  • 1 medium Bell pepper Chopped.

Spices and Seasonings

  • 1 tsp Cumin For an earthy flavor.
  • 1 tsp Paprika Adds color and flavor.
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.
  • 2 tbsp Lime juice Essential for brightness.
  • 2 tbsp Oil for cooking Can use any cooking oil.

Garnish

  • 1 bunch Fresh cilantro Chopped, for garnish.

Instructions
 

Cooking

  • In a large pan, heat oil over medium heat.
  • Add chopped onion, garlic, and ginger; sauté until fragrant.
  • Add chicken pieces and cook until browned.
  • Stir in coconut milk, bell pepper, cumin, paprika, salt, and pepper.
  • Simmer for 20-25 minutes until chicken is cooked through.
  • Add lime juice and stir.
  • Serve hot, garnished with fresh cilantro, alongside rice or salad.

Notes

Skipping the lime juice would drastically affect the flavor. Feel free to adjust spices according to preference.
