  • 1 head head of cabbage, chopped
  • 1 large large onion, chopped
  • 2 carrots, diced
  • 2 stalks celery stalks, diced
  • 1 can can of diced tomatoes Fresh chopped tomatoes can also be used.
  • 6 cups cups of vegetable broth
  • 1 teaspoon teaspoon of garlic powder Can use fresh garlic, added earlier with onions.
  • to taste Salt and pepper
  • to taste Optional: herbs like thyme or parsley Thyme adds a nice farmhouse flavor.

Cooking Process

  • In a large pot, sauté the onions, carrots, and celery until they are softened.
  • Add the chopped cabbage and cook for a few more minutes.
  • Stir in the diced tomatoes and vegetable broth.
  • Add garlic powder, salt, pepper, and any optional herbs.
  • Bring to a boil, then reduce heat and let it simmer for about 30 minutes until the vegetables are tender.
  • Serve hot and enjoy your healthy soup!

Notes

Store in the fridge for up to 4 days or freeze in portions. Reheat gently to avoid cabbage becoming over-mushy. If you like it silky, blend a bit. You can add chili flakes for extra spice.
