  • 4 medium potatoes, peeled and diced Waxy potatoes hold shape; starchy ones make it creamier.
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth
  • 1 cup sausage, sliced Choose chicken, beef, or plant-based sausage.
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk for a lighter version.
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped, for serving.

Preparation

  • In a large pot, heat a little oil over medium heat.
  • Add onion, carrots, and celery, and sauté until softened.
  • Stir in the diced potatoes and sausage.
  • Pour in the broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes until potatoes are tender.
  • Blend the soup for a smoother texture if desired, then stir in the heavy cream.
  • Season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

This soup can be made ahead and actually tastes better the next day. Reheat gently and add a splash of broth if it thickens too much. Optionally, try adding a splash of mustard for extra flavor.
