Ingredients
  

For the Sauce

  • 2 tablespoons Olive oil A rich base for sautéing
  • 1 medium Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 2 cups Roasted red peppers Fresh red bell peppers can be substituted
  • 1 cup Vegetable broth Chicken broth works as well
  • 1 teaspoon Smoked paprika Use regular paprika if necessary
  • 1 teaspoon Dried oregano Fresh oregano offers a more vibrant flavor
  • to taste Salt
  • to taste Pepper

For the Fish

  • 4 fillets Cod Tilapia or haddock can be used as substitutes
  • 2 tablespoons Fresh parsley (Chopped)

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium; add diced onion and sauté until soft (about 5 minutes).
  • Toss in minced garlic for 30 seconds until it smells fragrant.
  • Add roasted red peppers to a blender with vegetable broth, smoked paprika, oregano, salt, and pepper; puree until silky.

Cooking

  • Pour sauce back into skillet, simmer gently for 3–5 minutes to marry flavors.
  • Pat cod fillets dry, season lightly with salt and pepper, then nestle them into the simmering sauce.
  • Cover and cook 6–8 minutes, depending on thickness, until opaque and flaky.
  • Finish with chopped parsley and a tiny drizzle of olive oil.

Notes

You can roast fresh peppers instead of jarred. To add a citrus pop, a squeeze of lemon at the end is optional. Do not overcook the fish.
