Meatloaf Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced The more the better!
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs Plain or Italian-seasoned, depending on preference.
  • 2 large eggs
  • 1 medium onion, diced May result in tears!
  • 2 tbsp soy sauce Low-sodium recommended.
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  • Sauté diced onions in a skillet over medium heat until soft (about 5 minutes).
  • In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until everything is beautifully combined.
  • Shape the mixture into a loaf form in the greased baking dish.
  • Sprinkle the remaining Parmesan cheese on top and optionally add paprika or Italian seasoning for extra flavor.
  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing.

Notes

Feel free to substitute breadcrumbs to make it gluten-free. Ensure the chicken is fully cooked to avoid any food safety concerns.
