Ingredients
  

Dry Ingredients

  • 2 cups whole wheat flour Use fresh flour for best results
  • 1 cup all-purpose flour Adjust based on the freshness of the whole wheat
  • 1 tsp salt

Wet Ingredients

  • 1/4 cup honey Adjust to taste
  • 1 1/2 cups warm water About 110°F
  • 1 packet (2 1/4 tsp) active dry yeast Ensure the yeast is fresh

Instructions
 

Activation

  • Combine warm water and honey in a bowl, sprinkle yeast on top, and let sit for 5 minutes until foamy.

Mix Dry Ingredients

  • Whisk together whole wheat flour, all-purpose flour, and salt in a large bowl.

Combine Mixtures

  • Add yeast mixture to dry ingredients along with additional honey; stir until combined.

Kneading

  • Transfer to a floured surface and knead for about 10 minutes until smooth.

First Rise

  • Place dough in an oiled bowl, cover with a damp cloth, and let rise for about 1 hour until doubled in size.

Shape and Second Rise

  • Punch down the dough, shape it into a loaf, place it in a greased pan, cover again, and let rise for another 30 minutes.

Baking

  • Preheat the oven to 350°F (175°C) and bake for about 35 minutes until golden brown.

Notes

If your oven runs hot, cover with foil toward the end of baking. Don't overbake.
