Ingredients
  

Main Ingredients

  • 1 lb Large shrimp, peeled and deveined (Fresh or frozen, thawed)
  • 10 oz Linguine or fettuccine pasta Cooked al dente
  • 2 tbsp Olive oil A staple for cooking
  • 3 cloves Garlic, minced The more, the merrier!
  • 1/2 tsp Red pepper flakes Adjust to taste
  • 1/2 cup Sun-dried tomatoes, chopped Adds depth and tang
  • 1 cup Heavy cream Or coconut cream for dairy-free
  • 1/2 cup Grated Parmesan cheese Freshly grated
  • 1/2 cup Chicken broth or white wine No shenanigans, please
  • 2 tbsp Butter
  • 1 tbsp Fresh basil, chopped For garnish

Instructions
 

Cooking

  • Boil pasta until al dente, reserve 1/2 cup of water.
  • Sear shrimp with minced garlic and red pepper flakes until they're blushing pink.
  • Melt butter in the same pan, toss in the sun-dried tomatoes and broth, then pour in the cream and Parmesan.
  • Simmer until the sauce thickens.
  • Return the shrimp to the mix, toss with pasta and garnish with fresh basil.

Notes

Tips: For lower calories, use whole wheat pasta and lighter cream. Pair it with a side salad or garlic bread.
