Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Should be at the right softness.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt

For the topping

  • 10-12 pieces canned pineapple rings, well-drained and patted dry Pat them dry to avoid sogginess.
  • as needed tablespoon additional sugar for sprinkling For extra sparkle on top.

Preparation

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in the egg and vanilla until well combined.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture to form a soft dough.
  • Roll dough into 1½ tbsp balls, flatten slightly, and place on the baking sheet.
  • Top each dough disk with a pineapple ring, pressing gently.
  • Sprinkle sugar on top of the pineapple for extra sparkle.

Baking

  • Bake for 12–14 minutes until edges are golden.
  • Cool for 5 minutes, then transfer to a wire rack.

Notes

Ensure not to press too hard on the pineapple to maintain the cookie's integrity. Chilling the dough can improve handling, depending on your preference.
