  • 4 pieces corn tortillas
  • 4 large large eggs
  • 1 cup black beans, drained and rinsed
  • 1/2 cup salsa or hot sauce
  • 1 piece avocado, sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup crumbled feta cheese or vegan cheese
  • to taste salt and pepper
  • as needed olive oil for cooking

  • Heat a skillet over medium heat and add olive oil.
  • Lightly fry the corn tortillas until crisp and golden brown, then set them aside.
  • In the same skillet, crack the eggs and cook to your desired doneness (sunny side up or over easy).
  • In a small pot, heat the black beans and salsa together until warmed through.
  • Assemble the huevos rancheros by placing a tortilla on a plate, topping it with black beans and salsa, followed by an egg.
  • Garnish with slices of avocado, cilantro, and feta cheese.
  • Season with salt and pepper to taste and serve immediately.

Notes

Feel free to substitute ingredients based on what you have on hand. Adjust the heat level with your choice of salsa or hot sauce.
