For the Cookies

  • 1 cup butter, softened
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup sweetened shredded coconut Optional for added texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the vanilla extract and eggs, one at a time.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing well.
  • Fold in the Rice Krispies cereal, chocolate chips, and shredded coconut.
  • Drop by rounded tablespoons onto ungreased cookie sheets.

Baking

  • Bake for 10-12 minutes or until golden brown.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Optional: Chill the dough for 30 minutes to prevent excessive spreading. Store cookies in an airtight container to maintain crispness.
