Cooking Process

  • Boil the red potatoes until fork-tender, drain, cool, then cube or smash lightly — texture is your friend.
  • Form loose meat balls from the beef (don’t overwork) and smash thin in a hot cast-iron pan; cook until crusted, flip once, season with Cajun, and let the edges get gloriously brown.
  • While the beef cooks, caramelize the onions in the same skillet for added flavor.
  • Mix mayo, ketchup, and mustard for a quick sauce — taste and adjust as necessary.
  • Assemble the bowl: place lettuce as the base, add potatoes, smash patties, caramelized onions, shredded cheese, pickles, and drizzle with the sauce.
  • Finish with an extra pinch of Cajun or black pepper, based on your preference.

Notes

You can roast potatoes instead of boiling for crispy edges. Let the beef rest off heat for 2 minutes for better crust formation. Tenting cheese with a lid helps it melt faster.
