Ingredients
  

Meat and Vegetables

  • 1 pound ground beef or lamb
  • 1 medium onion, chopped
  • 2 pieces carrots, diced
  • 2 cups mixed vegetables (peas, corn, etc.) Use whatever is on sale.
  • 2 tablespoons tomato paste
  • 1 cup beef broth Make sure it’s not expired!
  • 2 teaspoons Worcestershire sauce Correct pronunciation: 'Wor-chester-shire'.

Topping

  • 4 cups mashed potatoes Homemade preferred.
  • 1 cup shredded cheese Cheddar or your favorite kind.

Seasoning and Cooking

  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, heat a glug of olive oil over medium heat and sauté the chopped onion and carrots until they’re just softened.

Cooking

  • Add in the ground beef or lamb and cook until it’s browned.
  • Stir in the mixed veggies, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let it simmer.
  • Transfer the meat mixture to a baking dish and spread it out evenly.
  • Top with mashed potatoes and sprinkle cheese over the top.
  • Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  • Let it cool slightly before serving.

Notes

This dish can be made ahead of time and frozen. Ensure veggies are fresh for best results.
