  • 2 cups fresh spinach, chopped Use fresh spinach and make sure to squeeze out excess moisture if using frozen.
  • 1 cup ricotta cheese Ricotta adds tenderness.
  • 1 cup mozzarella cheese, shredded Mozzarella gives a nice stretchy texture.
  • 1 piece egg For the filling.
  • 1 teaspoon garlic powder Adds flavor to the filling.
  • to taste Salt and pepper Season to your preference.

Dough Ingredients

  • 1 package pre-made pie crusts Store-bought for convenience.
  • 1 piece egg (for egg wash) Gives a golden finish to the pies.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix the chopped spinach, ricotta cheese, mozzarella cheese, egg, garlic powder, salt, and pepper until well combined.
  • Roll out the pie crusts and cut them into circles.
  • Place a spoonful of the spinach mixture onto one half of each circle.
  • Fold the dough over to create a pocket and seal the edges with a fork.
  • Brush the tops of the hand pies with beaten egg for a golden finish.

Baking

  • Bake in the preheated oven for 20-25 minutes or until golden brown.
  • Let cool slightly before serving. Enjoy!

Notes

If using frozen spinach, make sure to squeeze out excess moisture. These hand pies are very versatile; feel free to experiment with different fillings like mushrooms or caramelized onions.
