Strawberry Crunch Cheesecake Bites

Ingredients
  

For the crust

  • 1 cup Golden Oreos, crushed Use plain sandwich cookies if Golden Oreos are unavailable.
  • 2 tablespoons butter, melted

For the cheesecake filling

  • 8 oz cream cheese, softened Allow to sit at room temperature for easier mixing.
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup whipped cream Fold in gently.

For the topping

  • 1 package strawberry gelatin mix Sprinkle on top for a crunchy finish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
  • In a bowl, mix the crushed Golden Oreos with melted butter until combined. Press the mixture into the bottom of each muffin cup to form a crust.

Cheesecake Filling

  • In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Fold in the whipped cream until well combined.

Assembly

  • Spoon the cheesecake mixture over the Oreo crusts in the muffin tin.
  • Sprinkle the strawberry gelatin mix on top of each cheesecake bite.

Chilling

  • Refrigerate for at least 2 hours or until set.
  • Garnish with fresh strawberries before serving.

Notes

These cheesecake bites can be made ahead of time and are best served slightly chilled. They are also freezer-friendly; just thaw in the fridge before serving.
